Maisebrooke Farm has launched a brand new sausage to celebrate a fellow Waveney business’ success.

The new Maisebrook Farm Ripper sausage with the award-winning Green Jack brewery beer that inspired it. The new Maisebrook Farm Ripper sausage with the award-winning Green Jack brewery beer that inspired it.

The farm, which has its own butcher and farm shop dedicated to local produce, decided to create another sausage using Green Jack brewery’s beer.

The decision to use Ripper in the sausage was made after the beer won Champion Winter Beer of Britain at the Great British Beer Festival Winter in Norwich this week.

The sausage is the second beer infused product from Maisebrooke after previously creating the Trawlerboys sausage with the Green Jack’s beer of the same name.

Owner David Lay said they began selling alcohol on the farm in November 2017 and stocked Green Jack beer from the get go.

He said: “We take sausage-making very seriously and invent our own recipes for a lot of our sausages and Gluten free sausages.

“We have had a lot of success in local “Battle of the Banger” competitions and we were brainstorming what we could create next when our butcher Nigel Ratcliffe came up with the idea of using beer in a sausage whilst we were going through our own recipe book.

“The beer seemed to make the sausage very juicy and tender, and Tim Dunford of Green Jack’s thinks the acidity in the beer helps tenderise the meat, making the cooked sausage both succulent and “hoppy”.
